Dei Cavallini 

’My name is Damiano, like my grandfather. And just like him, I cultivate wine on the hills of Fara, in Alto Piemonte. Although life had led me to do other (Altro), in this area so difficult and extraordinary at the same time I made the bold (Ardita) decision to resume the family business. On my land, I cultivate indigenous varieties, enhancing their characteristics, sometimes in unusual (Insolita) manner, remaining faithful to the tradition and the expressivity of the historic production areas such as that of Caramino and Motto del Lupo. A moody (Lunatico) character takes me from season to season in search for prosperous (Prosperosa) harvest.

THE ALTO PIEMONTE 

Since the times of the ancient Romans, Alto Piemonte has been a region particularly predisposed to the cultivation of wine. In the Middle Ages, we can find abundant evidence of the popularity of wine from the Colline Novaresi area, which were exported to Lombardy, France and Switzerland. The tradition, established over the centuries, has reinforced the purely agricultural character of the area's economy that still resist and coexist with nature and progress. It really doesn't take much to discover how this Piemonte’s district, situated between Milan and Turin can offer, from landscapes among rivers to lakes, unspoiled valleys and mountains such as the majestic Monte Rosa. In these wild and unexplored areas, protected by forests, there are still historic vineyards waiting to be discovered

THE VITICULTURE 

The traditional vine training system is called Maggiorina. This method involves planting of three vines close together in order to allow the roots to go down in the ground, overcoming the compact first layer, to reach deeper and pebbly layers. The fragmented vineyards were never cultivated with a singular variety; the heterogeneity of soil brought the farmer to a deep knowledge of which of the local grape varieties would be best grown in the specific area. The company still applies these solid foundations while managing our vineyards. Each plant on a specifically cultivated plot will give characteristic notes to the grapes and consequently to the wine. These lands, fundamental and at the basis of the process, are completely covered with grass and enriched annually with organic fertilizers

FUTURE PROJECTS 

The firm belief that every vineyard is unique led me to select the most suitable areas. Here, I will plant new vineyards as suggested by the ancient vines alongside. We will obtain extremely expressive wines, complex, faithful to the territory but also current, environmentally friendly and derived from vines that look to the future and to climate change. The most important Cru are the Motto del Lupo and the Caramino, historic production areas that for years now have coexisted with woods, arable land and wildlife

The final expression of my values are my wines. Territorial, fresh and long-lived. Each of them faithfully represents the grapes from which they are derived and the vineyard where it was grown. Characteristic and characterful wines, just like me.
