Eros is the god of love. According to tradition, Eros was the son of Ares and Aphrodite. He is depicted as a child, often with wings, who takes pleasure in wreaking havoc in the hearts of lovers, sometimes inflaming and sometimes injuring them. This rosé wine made from Nebbiolo grapes is dedicated to Eros. During fermentation, the must has only brief contact with the skins, releasing the best fruit aromas that contribute to the production of this seductive wine that is excellent as an aperitif.
Vineyard: in Sizzano, Vernazzole region, vineyard Cirilu, 0-20 Ha. South-south/west facing. Acidic clayey sandy soil.
Grapes: 100% Nebbiolo, known locally as Spanna.
Grape yield per hectare: 6,000 kg manual harvest in crates in early October: short contact namely maximum 5-6 hours of skin with must. Then fermentation at a controlled temperature (20°C).
Maturing and bottling: During the unzipping of the grape bunches, Paride uses dry ice (criomaceration) to stabilize the aromas and color.
The grapes are then pressed in a traditional vertical press (which does not over-compress the grapes and ensures a gentle pressing).
Then fermentation in inox tanks.
Organoleptic characteristics: brilliant intense rosè; intense fresh aroma with hints of forest fruits, especially raspberries and strawberries, with considerable persistence of earthy notes reminiscent of wild flowers. An intense taste of ripe fruit, sharp but balanced and harmonious with a hint of tannin, allowing this wine to linger.
