IN THE VINEYARD

  • Port de la plante : Guyot
  • Fertilization: natural manure, green manure
  • Harvest: by hand in 20 kg crates; October
  • Average production: 45 hl/ha

IN THE CELLAR

  • Fermentation: in stainless steel tanks at controlled temperature with maceration on the skins for 15-18 days. Malolactic fermentation in wood.
  • Aging: Over 12 months in French oak barrels of 25 hl and tonneaux of 500 l.

TASTING NOTES

  • Color: Medium intense ruby red with garnet red reflections and good transparency
  • Bouquet: Rose hip, ripe red fruits and cherries in alcohol. Notes of face powder, dark chocolate and hazelnut.
  • Palate: Elegant, harmonious with velvety tannins and a long finish.

EVOLUTION AND FOODPAIRING

  • Evolution : 15-20 years

    Foodpairing : Handmade tajarin with white truffle from Alba, game, roasted and braised meats, aged cheeses.
