Characteristics:
This wine, made from grapes of an ancient local indigenous grape variety, the NEBBIOLO DI DRONERO (CHATUS), can be considered a unique mountain wine.
There have been reliable records of this crop in Dronero since the 13th century.
The vineyards of Dronero are personally tended and cultivated by Mauro Vini.
The vines are grown on a trellis and pruned according to the guyot method, with a limited number of buds to limit production in favor of quality. Because we are in a difficult environment characterized by strong temperature contrasts, old rules that have been passed down from generation to generation are still applied, especially in terms of pruning and tying (the arch is quite accentuated to achieve a kind of forcing) and green pruning, which involves quite drastic pruning. These local cultivars are quite rustic, little prone to cryptogams and resistant to gray mold and rot. Thanks to these characteristics, combined with the relatively dry climate, they require few pesticides, traditionally copper- and sulfur-based. Winemaking is traditional, with long macerations and aging for more than a year in large barrels to refine and blend the characteristics.
