IN THE VINEYARD
Training system: Guyot
Fertilization: Natural manure, green manure
Harvest: By hand in 20-kg crates; late August/early September
Average yield: 65 hl/ha
IN THE CELLAR
Fermentation: At 13–15 °C in stainless steel tanks, following gentle pressing of the grapes and cold static decanting of the must for 2 days.
Aging: In stainless steel tanks on the fine lees for approximately 3 months. This is followed by racking and natural clarification.
TASTING NOTES
Color: Intense straw yellow
Aroma: Floral and fruity notes of acacia blossoms, nectarine, and melon.
Taste: Juicy, fresh, fruity, and mineral
Development: It is best enjoyed during the first 3 years after harvest.
Food Pairings: Excellent as an aperitif. It pairs perfectly with appetizers, risotto, pasta with vegetables, and fish.
