WINE: 100% white Muscat
Pasiensa: is obtained from Muscat grapes that are half overripe and half left to dry on the vine. The wine is called Pasiensa because much patience is needed while waiting for the grapes to dry and also because of the long production process that must be constantly followed.
But above all, patience is needed while drinking, one sip at a time not to overdo it!
TECHNOLOGY
The carefully selected grapes are immediately pressed.
This is followed by a slow fermentation of about two months between November and late December. This is followed by six months of aging on the fine lees of fermentation and at least as many months in bottle.
TASTING NOTES
This wine has an intense straw yellow color.
The nose has a broad bouquet of ripe, jam fruit and dried flowers.
