Briseide - Paride Chiovini traditionally opts for Greek names because of his origins from the Chiovini family.

Briseis

Daughter of a priest from the city of Lirnesso, she was kidnapped by Achilles. To comfort her, Patroclus promised Achilles to marry her.

In fact, Briseis became the favourite slave girl, tenderly loved by the hero. Tradition depicts Briseis as a tall woman with dark hair and bright eyes.

This is DOC 'Colline Novaresi' Uva Rara, vinified in purity, an elegant but simple wine that accompanies the traditional dishes of Novara throughout the meal

Profile:

Vineyard: in the municipality of Sizzano, Vernazzole region, 0.25 ha vineyard. South-southwest exposure. Clayey-acidic soil.

Grape variety: 100% Bonarda grapes, locally called Uva Rara. Grape yield per hectare: 80 Q.li

Vinification: manual harvest in crates in early October. Red vinification, maceration in steel vats for 5-6 days at controlled temperature with pumping over every 8 hours.

Malolactic fermentation in steel in December/January. Maturation and bottling: aging in steel for 5 months. Bottling in April/May. Maturation in bottle for two/three months.

Aroma : Fine inviting bouquet of berries, rose and spices

Taste : With supple and broad finish, pleasant salty and pungent acidity confirms the aromas with a rich and harmonious flavour.

Serving temperature: 18 - 20 degrees Celsius. Optimal maturation: ready for consumption in the first 12 - 24 months, stored well, growing steadily in the first five years
