Vinification: Manual selection of grapes, followed by gentle destemming. Fermentation and maceration in 500-liter French oak barrels for about 20 days, at a constant temperature of 26 to 28 degrees Celsius. During this period, only the cap is pressed. Malolactic fermentation in steel follows aging: in French oak barrels of second maturation for 18 months on fine lees (battonage), then another 4 months in steel barrels. No filtration, only racking to remove natural sediment. Bottling takes place in August and the wine matures for another 4 months before leaving the cantina.
Sensory characteristics: intense ruby red color with purple highlights, a bouquet of plums, cherries and spices, accompanied by natural balsamic notes.
