Harvest period: Early September
Vinification: Manual selection of grapes, then direct pressing. Fermentation takes place in different barrels: medium toasted barriques of French oak for the Moscato D'Asti and steel barrels for the Sauvignon Blanc. The process takes place at a temperature of l6°C - l8°C.
Aging: in French oak barriques for Moscato D'Asti, in stainless steel barrels for Sauvignon Blanc, on fine lees (Battonage) for 6 months. In March, the wines decant and are transferred to remove natural sediment. Before bottling in April, the wines are blended and filtered to clarify. Another 2 months of refinement in bottle before leaving the cantina.
Nose and aroma characteristics: On the face nice straw yellow color. The nose is aromatic, giving hints of thyme and lily-of-the-valley mixed with exotic notes of mango and orange blossom. Its remarkable freshness, sweetness with a pronounced juicy finish makes Musa particularly recommended with aperitifs, aged cheese, meats such as raw ham and bacon, oysters, shellfish and fish in general.
