Seductive, persistent and softly tannic

- Altitude and location: 300 m above sea level; southeast
- Soil: Clayey and slightly calcareous, moderately sandy, rich in manganese and magnesium
IN THE VINEYARD
- Port de la plante : Guyot
- Fertilization: natural manure, green manure
- Harvest: by hand in 20 kg crates; October
- Average production: 40 hl/ha
IN THE CELLAR
- Fermentation: in stainless steel tanks at controlled temperature with maceration on the skins for about 20 days. Malolactic fermentation in wood.
- Aging: 6 months in French oak barriques, then 18 months in French oak barrels of 25 hl.
TASTING NOTES
- Color: Intense garnet red with purple reflections
- Bouquet: Rose hip, nutmeg, red berries and a hint of tobacco.
- Flavor: Full-bodied with notes of cinnamon, licorice, dark chocolate and black cherries.
EVOLUTION AND COMBINATIONS WITH FOOD
- Evolution: comes full circle even after 20-30 years
- Combinations: Agnolotti, raw meat, stewed meat, fried eggs with white truffle from Alba, aged hard cheeses.
