Ghemme DOCG wine obtained from Nebbiolo grapes grown in the town of the same name. The first evidence of Ghemme dates back to the temples of Tiberius in Roman times. This wine is produced as directed and evolves for a minimum of 18 months in wooden barrels (in French oak wooden barrels with a capacity of 5 Hl) with another 6 months of aging in glass. It has a fine intense cherry aroma with floral notes of violets and rose. Its balanced, dry intense flavor makes it an excellent companion to roasts, stewed meats and game.
Vineyard: in the town of Ghemme of 0.30 hectares. South-Southwest. Acidic clayey sandy soil
Grape: 100% Nebbiolo
Yield per hectare: 7,000 kg: manual harvest in crates in mid-October. Fermentation on the skin, maceration stainless steel vats for about 20 days at controlled temperature. Malolactic fermentation in stainless steel vats in November/December.
Aging and bottling: aging in stainless steel for the first four months. Bottling in April/May. Aging in oak barrels for 18-20 months and subsequent bottling, with a minimum of 6 months aging in glass (as per regulations)
Organoleptic characteristics: ruby red color with hints of garnet. Intense close-up of raspberries and black cherries. On the palate, the wine is full-bodied, intense with mild and balanced tannins.
Food pairing: appetizers with tender meat sauces, stewed in Ghemme (braised meat cooked in wine), roasts of red meat, game poultry marinated in wine and herbs or cooked on a spit, mature cheeses.
Serving temperature: 20 degrees
Optimal age: a wine with a lot of cellar potential. The quality of the wine will continue to evolve during the first 8 to 10 years
Alcohol content: 14%.
