- Altitude and location: 350 m above sea level; west/southwest
- Soil: Calcareous-clayey and sandy veins
IN THE VINEYARD
- Port de la plante : Guyot
- Fertilization: Natural manure, green manure
- Harvest: By hand in 20 kg crates; late August/early September
- Average production: 65 hl/ha
IN THE CELLAR
- Fermentation: At 13-15 °C in stainless steel tanks, after gentle pressing of the grapes and cold static decantation of the must for 2 days.
- Aging: In stainless steel tanks on the noble yeast residue for about 3 months. This is followed by the phases of siphoning and natural clarification.
TASTING NOTES
- Color: Intense straw yellow
- Bouquet: Floral and fruity notes of acacia flowers, nectarine peach and melon.
- Palate: Sapid, fresh, fruity and mineral. In Piedmont, the word arviàis used to describe a "very lively and clever" child.
EVOLUTION AND COMBINATIONS WITH FOOD
- Evolution: It comes into its own best during the first 3 years after harvest.
- Combinations with food: Excellent as an aperitif. It pairs excellently with appetizers, risotto and pasta with vegetables, fish.
