  • Soil: Calcareous-clayey and sandy veins

IN THE VINEYARD

  • Port de la plante : Guyot
  • Fertilization: Natural manure, green manure
  • Harvest: By hand in 20 kg crates; late August/early September
  • Average production: 65 hl/ha

IN THE CELLAR

  • Fermentation: At 13-15 °C in stainless steel tanks, after gentle pressing of the grapes and cold static decantation of the must for 2 days.
  • Aging: In stainless steel tanks on the noble yeast residue for about 3 months. This is followed by the phases of siphoning and natural clarification.

TASTING NOTES

  • Color: Intense straw yellow
  • Bouquet: Floral and fruity notes of acacia flowers, nectarine peach and melon.
  • Palate: Sapid, fresh, fruity and mineral. In Piedmont, the word arviàis used to describe a "very lively and clever" child.

EVOLUTION AND COMBINATIONS WITH FOOD

  • Evolution: It comes into its own best during the first 3 years after harvest.
  • Combinations with food: Excellent as an aperitif. It pairs excellently with appetizers, risotto and pasta with vegetables, fish.
