Vineyard surface: 0,5 Ha
Vinification: the entire grapes picked up in small cases of 15 kg, are being pressed directly in a soft and a selected way. The moist is maintained at the temperature of 12-13°C and put into a static clarification before the controlled temperature fermentation (16-17°C). At the end of the fermentation the wine is filtered and remains on lees, in the stabilization , till middle of March with frequent “batonnage”. After that phase the wine is bottled to preserve all its bouquet which is very particular and characteristic.
bouquet: The olfactive character of this wine is elegant, pleasant and very particular. The distinctive note of this wine is the note linked with the volatile thiols that results in the sensations of a boxwood, a tomato leaf, a passion fruit and a grapefruit. The result is the very intense and intriguing flavour, of the immediate pleasure.
taste: After a generous olfactive experience also the palate is being satisfied from the subtle freshness of the wine. The sapidity is obvious and balanced well with alcohol and a rich extract. This a pleasant aperitif wine but also pairs well with some delicious food, especially the one of the vegetarian.
