Sizzano DOC: harmonious blend of Nebbiolo 60%,  Vespolina 30% and Uva Rara 10%
A remarkable recognition of the fine qualities and super elegance of Sizzano wine is the Decree of the President of the Republic (then Giuseppe Saragat) recognising the "appellation d'origine contrôlée" Sizzano on 18 July 1969.
The disciplinary rules annexed to the Decree lay down, first, the proportion of grapes for the production of Sizzano d.o.c.: Nebbiolo (Spanna, Vespolina and Bonarda novarese (or rare grapes), in quantities of 40-60%, 15-40% and 25% respectively, provided that they are all produced in the territory of the municipality and under traditional environmental and cultivation conditions, with the exception of the land to the north which is located at the bottom of the valley.
The minimum natural alcoholic strength of Sizzano is 11.5 (our selection is 14.50.  Mandatory maturation is at least three years, two of which are in oak or chestnut barrels. Finally, article 6 of the regulations gives us the identity card of the Sizzano d.o.c.: colour ruby red with garnet reflections; vinous aroma with a characteristic aroma of fine and pleasant violet; taste dry, juicy and harmonious. The disciplinary procedure was subsequently modified in 2010, 2011, 2013 and 2014. 
Today, the ampelographic basis of the DOC Sizzano art. 2 specification is as follows: Nebbiolo (Spanna) from 50% to 70% Vespolina and Uva Rara (Bonarda Novarese) alone or together from 30% to 50%, can also contribute to this production of non-aromatic redcurrants, from grapes suitable for cultivation in the Piedmont region in the maximum amount of 10%. The adjustments included the production yield, 90 ha and 81 ha for SIZZANO RISERVA. The period of ageing and refinement: Sizzano 22 months of which 16 in wood, Sizzano "Riserva" 34 months of which 24 in wood.
Sizzano was recognised, as mentioned above, on 18 July 1969; on the same day the d.o.c. was similarly transferred to Boca, on 13 August after Fara, to Ghemme on 18 September. In this way, a beautiful and refined crown of wines from Novara rightly took on the honour of the official coat of arms.
In 1994, as amended by ministerial decree in 2011 and 2014, a new registered designation of origin was added to the already existing designations of origin for the Novara area, the d.o.c. Colline Novaresi: intended to qualify and support the production of younger wines, whose consumption is increasing, in addition to the nobler and ripening wines to which even more selected grapes will be dedicated.
The new d.o.c. includes several white, red and rosé wines produced in Central Novarese, in the area between Grignasco, Borgomanero, Marano Ticino, Oleggio and Briona: Sizzano, Ghemme and Fara dominate in the centre.

Today, a unique wine in this respect is the Sizzano DOC of Paride Chiovini from Alto Piedmont with barely 0.34 hectares of production! One of them, with 24 months of wood ageing, 4 months in the bottle and a long maceration, is the final result in a word "sublime".
