Each lot was vinified separately. After destemming and light crushing, must was "sealed" with CO2 for gentle warm maceration of approximately a day. Alcoholic fermentation began about 24-36 hours later from native wild yeasts only. The malolactic fermentation took place immediately after the alcoholic fermentation in French oak casks with a capacity of 500l, 50% were of new wood. The wine aged in the same French oak barrels for 12 months, followed by 9 months in the bottle.
