Profile: Elio is one of the top producers of the region. The vineyard has an eastern and north-eastern exposure and the soil is calcareous and very sandy. The vines are on average 10-30 years old. The maceration on the skins lasts for approximately 3-4 days in rotary fermenters at a controlled temperature. The wine then ages in used French barriques for five months. The production is 15,000 bottles. This wine goes very well with appetisers and pasta.
