Soil: clayey-calcareous Exsposure and altitude: south-east - 250 m Max crop./hectare: 85 ql/hectars Harvest period: second/third week of September Picking up: 100% by hand in small cases Growing location: Grinzane Cavour OENOLOGICAL CHARACTERISTICS Vinification: crushing and de-stemming, prefermentative maceration for 12 h at 5°C, spontaneous fermentation with the skins for approx. 12 days at a controlled temperature (15°C) until the end of alcoholic fermentation. Racking through hand wine press machine. Then the maturation goes on in stainless steel with weekly batonage, and 1 year in bottle.
Nose: fragrant and delicate, softly aromatic, with mountain flowers notes, multi-flower honey scents with a balsamic grain , reliable to mynths and pinenuts. Storage: 5 years or more, depending on the vintage;
Palate: savoury and enveloping, it lingers in the mouth in the mouth thanks to its acidity which makes it fresh despite the complexity that characterises it.
Serving temperature: 8/10° C.
Pairing foods: very versatile wine, ideal with cheese and charcuterie entries, but also perfect during the whole meal, especially with fish and vegetables dishes
