Profile: the vineyards are located in the commune of Gavi at 250-300 metres above sea level and have a south-eastern exposure. The soil consists mainly of clay and marl. There are approximately 4200 vines per hectare. Their age is on average 50 years. The fermentation takes place in stainless steel tanks for 24 hours, followed by the alcoholic fermentation at a controlled temperature which lasts for three weeks. Afterwards there is the malolactic fermentation. The wine ages for four months in French barriques, followed by four months in stainless steel barrels and finally in the bottle for at least a year before sale.
