Profile: Airales means sunny area in the old Monferrato dialect. Indeed, the vineyard is located at about 280 m above sea level on the top of a hill that is often windy and constantly exposed to the sun. Produced in a few rows of Chardonnay, Sauvignon Blanc and Cortese, the production is very strictly limited to less than 2000 bottles.
The land where these vineyards are located is rich in marine sediments and fossils dating back to ancient times, when Monferrato was still a vast blue sea.
Fermentation takes place in steel vats where the wine macerates for about 5-7 days and malolactic fermentation takes place. By the end of March the wine is bottled and left to rest for about 2 months.
Aroma: Floral and fruity notes such as pear and peach.
Taste: On the palate it is mineral, dry, fresh and very balanced.
