Colour: bright yellow with green hues. Perlage: fine, almost invisible and very stable bubbles. Nose: dried fruits, herbs and apple. Flavour: dry, wrapping and persistent. Suggested food pairing: from aperitif through to fish and white meats-based dishes and spongy desserts. Recommended serving temperature: 6-8°C.
Grape variety: Vitigno Innominabile ( Erbaluce ) 100%. Yield per hectare: 60q. Vinification: second fermentation of the spumante base, alcoholic fermentation inside the bottle, “sur lie” resting period, disgorgement after 24-36-48 months, Zero Dosage technique. Longevity: 2/3 years from disgorgement.
