Hallé Rosè arose from the vinification of the very early ripening grapes of our Nebbiolo, in order to maintain a correct acidity and a not excessive alcoholic potential. The Nebbiolo grapes, once separated from the stalks, are transferred directly to the press for a very gentle pressing with maceration carried out directly in the press for 2 hours, with dry ice to maintain a very low temperature and better preserve the aromas of Nebbiolo. The skins go with the rest. After only a few hours of waiting, we get the special and delicate shade of antique pink that will distinguish the rose in the bottle. The must then ferments, now separated from the skins, in steel tanks at a controlled temperature.
Bottled according to the Metodo Classico (the first in northern Piedmont to produce this type of wine).
Excellent aperitif, but also during meals with fish or white meat.
